Improve the flavor of your chicken soup recipe

A Thai company specializing in soup seasoning for food service contacted us with a formulation challenge: they wanted to improve taste while optimizing costs in their chicken soup recipe. Their products are crafted for both local markets and export to Europe and Asia, requiring a clean label solution to comply with stringent regulations like EU food standards.

The main challenge was to improve the flavor of the original

The client approached us with a specific challenge: “I would like to improve the complexity of chicken taste and the creaminess of my soup, at a reasonable price.” Having previously used yeast extract, they were familiar with our ingredients and did not require technical training.

The R&D Manager reached out to Kritapas Phanumas, our sales manager based in Bangkok, who visited the client to identify their pain points and gather more information about their products. This collaboration helped map out potential solutions tailored to their chicken soup recipe.

Our prospect’s challenge was aligned with the current market trends. In 2023, 86% of consumers in Thailand believed food and drink prices had increased over the past year. (FMCG Gurus) Moreover, taste, sustainability, and natural claims heavily influence consumers’ perceptions of value, with 79% of respondents citing taste as a key attribute. (FMCG Gurus, 2023)

Yeast extract is particularly well-suited to address these consumer demands, as it can provide rich, deep flavors while also being a sustainable, natural, clean-label ingredient.

Thailand consumers are sensitive to prices

Biospringer identified the suitable solution thanks to a locally based manager

During this project, we encountered several challenges, notably the requirement for a competitive price while achieving the right flavor profile. This necessitated a thorough understanding of the application. We asked many questions about the desired outcomes, including enhancing creaminess, meatiness and umami.

Kritapas emphasized that the final taste would heavily depend on the application, requiring several tests to pinpoint the optimal solution. He suggested testing different yeast extracts:

Springer® Reveal Creaminess

Known for its balanced, versatile flavor profile, with creaminess functionalities

Springer® Umami

A reliable option to boost the overall flavor profile and enhance the umami taste

After conducting tests, the client expressed a strong interest in the Springer® Reveal Creaminess yeast extract.

Our prospect’s products testings and feedback

The customer provided feedback on the various tests:

  • Springer® Reveal Creaminess (dosage: 3% in soup seasoning) completely dissolved. It was clear and provided a complete and creamy chicken profile, at an acceptable price.
  • Springer® Umami (dosage: 1-3%) provided a good umami enhancement but insufficient for creating a distinct chicken taste in the chicken soup recipe

In this case, Springer® Reveal Creaminess was the most suitable option, delivering the ideal balance of flavor profile and affordability. Its well-rounded profile improves creaminess and enhance the overall chicken flavor of the seasoning. This led to a notable improvement in taste and depth, while also helping our customer optimize costs.
