It was hosted by Asia Pacific Food Industry. He explained that we have created a portfolio of dedicated yeast extract solutions in Asia Pacific. In fact, <strong>the salt reduction trend continues<\/strong> with rising consumer demands for healthier food. Moreover, the rapid spread of Covid-19 disrupted consumers\u2019 lives and impacted awareness of health and well-being. Without a doubt, <strong>reducing salt in products is a real challenge for food manufacturers. <\/strong>It is not merely about \u201creducing the salt amount\u201d. It is about finding flavorful and cost-effective alternatives to maintain the appeal of products.<\/div>\n<p>[\/vc_column_text][vc_separator type=&#8221;transparent&#8221; thickness=&#8221;5px&#8221;][vc_column_text]<\/p>\n<h4>Why is reducing salt so difficult?<\/h4>\n<p>Salt is challenging to remove as it plays multiple roles in foods. In fact, reducing salt makes food less appealing because it also decreases the <a href=\"https:\/\/biospringer.com\/en\/natural-products\/#taste\">taste<\/a> intensity. Morevover, salt impacts the price of the final product. It is an \u201cinexpensive way\u201d to enhance food flavor. Therefore, the complications behind salt reduction are challenging for the food producers. Thus, many countries in APAC have started developing their own salt reduction programs. For example, \u2018Eat Right India\u2019 Movement was launched by Authority of India (FSSAI) in July 2018. The Australia Department of Health also implemented a salt reformulation program in 2020 with a target of 27 food categories. Encouraged by changing consumer expectations and new regulations, food manufacturers are reformulating to reduce salt. Indeed, this trend showed growth for reduced salt claims across most food segments in this region. <strong>In 2021, the <a href=\"https:\/\/biospringer.com\/en\/food-application\/#snacks\">snack<\/a> category had the highest percentage of product launches with a reduced salt claim (24%)<\/strong>. It was followed by <a href=\"https:\/\/biospringer.com\/en\/food-application\/#sauces\">sauces<\/a> and <a href=\"https:\/\/biospringer.com\/en\/food-application\/#snacks\">seasonings<\/a> (17%) and <a href=\"https:\/\/biospringer.com\/en\/food-application\/#fish\">processed meat and meat substitute products<\/a> (8%). Thus, reformulating for salt reduction brings an opportunity for innovation and promoting of products to new consumers, such as the elderly or younger generations.
