The interest in yeast as an aromatic base to <a href=\"https:\/\/biospringer.com\/en\/natural-products\/#taste\">improve the flavors<\/a> of <a href=\"https:\/\/biospringer.com\/en\/food-application\/#soups\">soups, broths<\/a>, <a href=\"https:\/\/biospringer.com\/en\/food-application\/#sauces\">sauces<\/a> and other dishes had been developed until the 50\u2019s, when yeast extract arrived on the market.<\/p>\n<h4>Yeast definition<\/h4>\n<p>Yeast is a microorganism which belongs to the fungus family. The first yeast originated hundreds of millions of years ago. It is composed of: proteins 49%, carbohydrates 40%, minerals 7% and lipids 4%. Those components are protected from the extracellular environment by a cell wall.<\/p>\n<h4>Yeast extract comes from yeast<\/h4>\n<p>Yeast extract\u00a0 comes\u00a0 from\u00a0 fresh\u00a0 yeast\u00a0 and is\u00a0 therefore\u00a0 a <a href=\"https:\/\/biospringer.com\/en\/yeast-extract\/\">natural origin ingredient<\/a>. No synthetic\u00a0 or\u00a0 chemical\u00a0 ingredients\u00a0 are added\u00a0 during\u00a0 its\u00a0 production.\u00a0 It keeps\u00a0 its natural\u00a0 attributes\u00a0 and\u00a0 organoleptic\u00a0 qualities throughout the whole manufacturing process: its\u00a0 inner\u00a0 enzymes<sup>1<\/sup>\u00a0 cut\u00a0 yeast\u00a0 proteins\u00a0 into amino acids to isolate tasty components. Thus, we obtain yeast extract.<\/p>\n<h4>A gluten-free ingredient<\/h4>\n<p>Baker\u2019s yeast extracts usually do not contain gluten as no gluten derivative is used during the process. This is a good thing when you know that <strong>gluten-free is a main food trends<\/strong>: the prevalence of gluten intolerance has been estimated to globally approximate 1%<sup>2<\/sup>. According to this trend, even people who do not have celiac disease are trying to avoid it.<\/p>\n<h4>Other characteristics<\/h4>\n<p>Yeast extract is a non-animal ingredient\u00a0 which\u00a0 make\u00a0 it\u00a0 the ideal\u00a0 choice\u00a0 for\u00a0 many\u00a0 vegan products.\u00a0 This\u00a0 is\u00a0 a\u00a0 chance\u00a0 to <a href=\"https:\/\/biospringer.com\/en\/natural-products\/#taste\">bring\u00a0 taste<\/a>\u00a0 to\u00a0 vegan\u00a0 products and\u00a0 also\u00a0 proteins,\u00a0 vitamins and minerals.
