That\u2019s because of Kenji Lop\u00e9z-Alt of the website Serious Eats. Indeed, he is evangelizing the stuff on tour for his new book, <a class=\"ovr\" href=\"https:\/\/www.amazon.com\/The-Food-Lab-Cooking-Through\/dp\/0393081087\" target=\"_blank\" rel=\"noopener noreferrer\"><i>The Food Lab<\/i><\/a><i>.<\/i> He presents it as one of the all-time greatest \u201c<a href=\"https:\/\/biospringer.com\/en\/natural-products\/springer-umami\/\"><strong>umami<\/strong> <\/a>bombs\u201d you can keep in your kitchen cabinet. Unlike anchovies or fish sauce, it\u2019s 100 percent vegan.[\/vc_column_text][\/vc_column][vc_column css=&#8221;.vc_custom_1532958716230{padding-top: 25px !important;padding-bottom: 55px !important;}&#8221;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h4>What is Marmite?<\/h4>\n<p style=\"text-align: left;\"><strong>Marmite<\/strong>\u00a0and its nearly interchangeable Australian sister, Vegemite, are essentially <strong>yeast proteins<\/strong>, byproducts of the alcohol industry. If that sounds pretty gross to you, <a class=\"ovr\" href=\"https:\/\/www.smh.com.au\/national\/gillard-and-obama-talk-afl-vegemite--and-a-little-bit-of-politics-20110307-1blhx.html&amp;#8212\" target=\"_blank\" rel=\"noopener noreferrer\">you\u2019re not alone<\/a>. Salty, savory, and enormously potent, one smear of the paste is enough to send most unacclimated palates running. The UK company has long poked fun at its own divisive flavor with the tagline \u201cLove it or hate it\u201d. Now, it is with a tongue-in-cheek campaign to end #marmiteneglect. Lop\u00e9z-Alt admits that the paste is an acquired taste eaten on its own. However, he recommends pairing it with other <a href=\"https:\/\/biospringer.com\/en\/natural-products\/springer-umami\/\"><strong>umami-rich ingredients. <\/strong><\/a>The objective is to maximize impact and minimize the likelihood that a single source of flavor will overpower a dish.<\/p>\n<p>Could Lop\u00e9z-Alt usher in an American Marmite revolution? Indeed, the rest of the English-speaking world has been harnessing <strong>the power of yeast extract<\/strong> for more than a century, <strong>both in cooking and as a dietary supplement<\/strong>. Beginning in the 1920s and 30s, it was given to pregnant women as a powerful source of folate and to prevent anemia. <strong>Marmite <\/strong>and Vegemite were included in the ration packs of British and Australian soldiers during WWII to keep \u201cfighting men fighting fit.\u201d Today, the NHS recommends Marmite as<strong> a good source of B12 for individuals on a<\/strong><strong>\u00a0<a href=\"https:\/\/biospringer.com\/en\/natural-products\/#vegan\">vegetarian diet<\/a><\/strong>, who don\u2019t regularly absorb the vitamin from animal foods.
